Love the first step. You get some flavor of the onion without having to actually eat raw onion. 

 

Not sure about refrigerating the sandwiches to eat later. Think I would eat it freshly made.

This brought back memories from my childhood of "Bermuda onion" sandwiches which the adults had.

Just in time for the local fresh vegetables we just got yesterday.  Man, a tomato from nature's sun tastes so good!!!
