Triple Citrus-Ginger Quick Bread

I made this today and it is just delicious! It comes together in no time (10 min. prep time!) and the payoff is so worth it! (I think it is from Williams Sonoma if I remember correctly!?)

Triple Citrus-Ginger Quick Bread

2 c. all-purpose flour

1 c. sugar

2 tsp. baking powder

1/2 tsp. salt

Zest of 1 orange

Zest of 1 lemon

Zest of 1 lime

1/2 c. finely diced candied (crystallized) ginger

3/4 c. milk

2 eggs

8 Tbs. (1 stick) unsalted butter, melted and cooled

1 tsp. vanlla extract

Preheat oven to 350*. Lightly grease 8"x4" loaf pan.

In large bowl, whisk sugar, flour, baking powder and salt. Add citrus zests and candied ginger; toss to distribute evenly. In another bowl, whisk milk, eggs, butter and vanilla. Add to flour mixture; stir until combined. Do not overmix.

Pour batter into prepared pan. Bake until toothpick inserted into center comes out clean, 55-60 minutes. Transfer pan to wire rack; let cool 10 minutes. Turn loaf out onto rack; let cool completely. Enjoy!
