BTW, I live in Arizona, & warm, soft flour tortillas are popular at breakfast.

I make chicken enchilada casserole about once a month (hubby's favorite) made some for Sunday dinner yesterday, I use flour tortillas, they never come out soggy, etc., and leftovers taste even better, IMO.

That is one of my hubby's favorite dishes too. I loathe soggy, slimy food and was very surprised the sliced flour tortillas did not get soggy, but they didn't.

 

I do bake the casserole for about 60 minutes and let it stand for about 30 minutes before I slice it. I layer the ingredients like lasagna.

Oftentimes we get fresh made tortillas from a generous neighbor when her mom comes to visit. Really tasty. 

 

When we don't have the fresh made, we use the Mission tortillas...usually street taco size. ITA with you about how great Mission tortillas are vs other brands I have tried.

That's exactly how long I cook mine and let it sit before serving too.  When we first got married, I made enchiladas with ground beef the hand roll method it was so time consuming (to me) and because of that I would make alot so that he could have leftovers during the week.  Needless to say I did not make it too often.  Then I discovered the casserole method and make it with shredded chicken, chopped onion, olives, cheese, chopped green chilies and the sauce, so much easier to just layer😊.
