I signed up for Blue Apron for 3 nights a week.

 

Tonight it was: Salsa Verde Shrimp and Gnocchi

 

I did it so we wouldn't be tempted to order out (from boredom)

there were a lot of dishes to be done afterward and it took nearly an hour. It was very tasty!  I never cooked or ate kale before.

Our's is usually a 3:00 p.m. "meal" (if you can call it that!). Today was acorn squash filled with butter/brown sugar, and garlic bread. Neither one of us was particularly hungry, and yes it would be a strange meal for some people! Tomorrow will probably be bacon that I need to use up, scrambled eggs and French toast.

Tonight we had leftover deviled crab with homemade tarter sauce, leftover scalloped potatoes, (he)  mixed vegetables, (me) roasted whole pods of okra.  (We had slaw last night with the deviled crab and didn't want it again.).

 

The okra was SO like fried without the fat and calories, I'm addicted now!!!

Had meatloaf with baby carrots and potatoes baked with it. And cole slaw. Using up everything I can from the freezer and pantry. Tomorrow will be turkey pot pie from Taste of Home Quick cooking recipes. NOT going out and hope the food holds out for a couple more weeks.

@doxie1 , The roasted okra pods were an experiment!  I did the same as I do with the small Brussels sprouts and fresh yellow crook neck squash cut in finger size.and zucchini.

 

Heat oven to 400 degrees.

Spread al foil on a bake sheet.

Spray lightly (I use olive oil)

Spread frozen pods out.

Lightly spray.

Salt, pepper; or lightly sprinkle with Mrs Dash

Roast for 10 -12 minutes.

Turn, continue roasting (okra 10 min; Brussels sprouts, 10 min; fresh squash,15 min because of the moisture.

 

Place in bowl with a little butter.

Sprinkle with Parmesan cheese (squash)

Can also be lightly drizzled with balsamic vinegar
