Benzgirl: My 'Marinated Carrots' didn't appeal to you because of the tomato soup ingredient (LOL). So this recipe wouldn't be up your alley, either. It is tasty, though, and those who have enjoyed the muffins never guessed the soup.

Set aside:

2 cups flour, 1 tsp. cinnamon

Cream:

1/2 cup shortening, 1 cup sugar

Toss in:

1 cup chopped nuts, 2 cups raisins (I soak them first)

ADD: 1 tsp. soda to a can of tomato soup

COMBINE ALL 3 MIXTURES - Fill muffin pans

Bake at 400 degrees for about 30 minutes.

NOTE: I use the less expensive soup (house brand) as it is a bit thinner than the national brands, making the muffins not as firm. Everybody's taste is different.
