Perhaps some of you would like to preserve a few of your fresh tomatoes.
This is my mother's recipe for freezing them. It is an excellent "tried and true" recipe and easy to make.
Italian Fresh Tomato Sauce
1 tbsp. butter
1/2 cup chopped onion
1 clove garlic, finely minced
2 cups peeled and chopped, fresh tomatoes (Italian preferred)
2 sprigs fresh thyme or 1/2 tsp. dried thyme
1 bay leaf
Salt and freshly ground black pepper, to taste
Heat butter in saucepan and cook onion and garlic until onion is translucent.
Add remaining ingredients and cook, stirring occasionally, about 15 minutes. (Cook uncovered to have thicker sauce.)
Remove bay leaf.
Cool and freeze. (Leave 1" space in freezer jars.)
Yield: about 2-1/2 cups.
