Tis' the season for "Chocolate Covered Cherries"

For our family Christmas would not be complete without chocolate covered cherries. This was always my mom's and brother's favorite candy around Christmas, I can remember as a little girl at Christmas time buying a box for my mom and brother for 99 cents a box and I would gift wrap them for their present and they would act so happy when they opened them...lol

These cherries rock!!!!

Chocolate Covered Cherries
Ingredients
3 cups powdered sugar
1/4 cup margarine
1/4 cup sweetened condensed milk
1 teaspoon vanilla
1 pinch salt
maraschino cherry, drained (with stems on, about 50 cherries) I buy them at Costco
milk dipping chocolate
Paraffin wax (2 inch square)

Directions
Combine the first 5 ingredients until well blended and smooth and place in fridge until firm.
Meanwhile spread out the drained cherries on a cookie sheet and freeze for at least 1 hour.
Scoop out about 1-2 teaspoon of filling and form into a ball around a cherry.
Place on a wax paper lined cookie sheet and freeze for 1 hr after you have formed them all.
At this point you can place them in a container or freezer bag and return to the freezer for dipping later when it's convenient.
Melt dipping chocolate and Paraffin wax (chopped) using your hands dip each cherry placing it on a wax paper lined cookie sheet and chill in fridge until chocolate is solid.
Place in an airtight plastic container and keep in a cool dry place for up to 1 month.

BEST IF ALLOWED TO RIPEN FOR 1 TO 2 WEEKS BEFORE EATING
THE CANDY WILL THEN HAVE A GOOEY CENTER
