This soup is so easy to make and is made from ingredients that I always have in the pantry. A good soup to have for the family. I serve a bowl with a grilled cheese sandwich, if we are super hungry.

Thrifty Taco Soup

1 pound lean ground beef
1 large onion, chopped
15 oz. can black beans, drain and rinse
15 oz. can kidney beans, drain and rinse
15 oz can whole kernel corn, undrained
28 oz. can stewed tomatoes, with celery, onions and green bell pepper
8 oz. can tomato sauce
1.24 oz. packet taco seasoning mix
1 handful tortilla chips, for garnish
1 dollop sour cream, for garnish (optional)

Brown the beef with the onions in a skillet. Drain off excess fat.
Transfer beef and onions to a stockpot and add the beans, corn, tomatoes, tomato sauce and seasonings.
Simmer for an hour on low heat or cook in a slow cooker on LOW setting for 5-6 hours.
To serve: Ladle into bowls and top with crushed tortilla chips, shredded cheddar cheese and sour cream. Prepare a green salad on the side or grilled cheese sandwiches, if really hungry.
NOTE: Add beef broth or water and bouillon cubes, if necessary, to have desired consistancy.
