Threshing time Potato Salad from Iowa

My friend Bernice made this simple potato salad for the threshing crew that helped them

at harvest time in the 30's-40's. This is absolutely the best! Do not substitute for best results.

Peel 5 # of red potatoes . Cook in salted water until done , but still a bit firm. Cover and refridgerate over night.

Hard boil 1 dozen eggs . Refridgerate over night.

Next day, in a large bowl dice the cold potatoes into 1 inch cubes. Dice 1-2 large

onions into the potatoes. Dice the hard boiled eggs in bitesize pieces.

In another large bowl mix 1 pint of Miracle Whip style salad dressing, 2 Tablespoons

yellow mustard,

1/2 cup sugar

3/4 cup whole milk

salt and pepper to taste

Divide the dressing between 2 bowls of prepared potatoes , onions and hard boiled eggs.

Stir carefully but well.

Cover and keep very cold. Allow ingredients to blend flavors.

Makes 2 large bowls
