I post this recipe every year when I seem to have way too many cucumbers. It is easy to make and they are very good. They stay good in the fridge for 3 months. I use a mandolin for slicing and also put mine in canning jars. No need for sterilizing the jars.
Three – Hour Refrigerator Pickles
6 Pounds of cucumbers
4 medium onions
4 cups sugar
4 cups of white vinegar
½ cup salt
1-1/2 teaspoons ground turmeric
Slice the cucumbers ¼ inch thick. Slice onions 1/8 inch thick. Place both in a large nonmetal bowl. Combine the remaining ingredients; pour over cucumber mixture. Stir well for 5 minutes. Cover and refrigerate 3 hours before serving. Store in the refrigerator for up to 3 months, stirring occasionally. Yield: 2-1/2 quarts
We use canning jars to put them in. No need to do anything with them just place in the jars and put the lid on them.

I am doing great! Very hot here in NH and we are having a bad drought but enjoying the summer weather. How are you doing?
Fresh veggies are coming a little slowly this year I guess because of the drought.
I hope that you get a chance to make the pickles. They are so easy to make and really good. Glad that you enjoy my recipes. I enjoy yours also. Nice chatting with you.

I remember this from last year, I sooooooo wanted to try it this year but my cukes are looking pretty sad at this point LOL!

Good idea about getting them at the Farmers Market....thanks for reminding me. Ours are coming in very slowly and not sure how good they will be because of a drought here. I hope that you get a chance to make them this year!
