Hey everyone,Its getting so cold here and the wind is blowing and Id love for us to post our favorite soups...
This one i got form the boards a while back, im not sure who it belongs to?? but its really good!! Any good lentil or potato or cheeseburger or rice soups???

I add onion and garlic to this also chicken broth instead of beef!!!!
Black-Eyed Pea Soup
1 lb. dried black-eyes peas
1 lb. smoked turkey sausage, sliced
4 carrots, chopped
1 cup water
3 (14 oz.) cans beef broth (I like the boxed beef stock, if I have it on hand)
I always put in a few bay leaves.
Sort, rinse, and drain the peas. In a large stockpot, cover peas with cold water and bring to a boil. Turn heat, cover, and let sit for an hour. Drain peas, then rinse.
Combine with remaining ingredients in crock pot. Cook on Low about 8 hours, until peas are tender. Season to taste with salt, black pepper, and cayenne pepper if desired.
Serve with warm, buttered french bread. I also sprinkle finely chopped fresh parsley and/or green onions before serving.
