This is really, really good; everyone loves it and it's fast and easy to make. This is the original recipe, but I've made the following changes: I don't bother with the icing; the candy is sweet enough without it, and IMO it's really redundant. If you do use it, you could make it any color you want, depending on the occasion. But, to make it look pretty, I use the multicolored mini marshmallows.

The Pink Slice

/><br/> <br/> <br/> 1/2 c butter or margarine<br/> 1 pkg butterscotch chips<br/> 1 c finely grated coconut<br/> 1 c peanut butter<br/> 1 pkg mini marshmallows<br/> 2 c powdered sugar<br/> 1 tsp butter or margarine<br/> 3 red food coloring drops<br/> milk, enough to make good consistency of icing<br/> <br/> Directions:<br/> <br/> Melt and cool the 1/2 cup of butter and package of butterscotch chips.<br/> <br/> Add coconut, peanut butter and marshmallows. Mix well.<br/> <br/> Press into greased 9x9 pan.<br/> <br/> Mix powdered sugar and remaining butter. Add milk by teaspoons until desired consistency. Add red coloring to make a nice shade of pink. Spread over squares and chill. Freezes well.<br/> <br/></p>
