I just wanted to thank you for posting the recipe for the Sungold Cherry Tomato Pasta in the August Recipe Exchange Game.

 

We are overrun with yellow cherry tomatoes and I am at a loss for uses for them.

 

I am going out tomorrow and gather the ingredients for the recipe you posted.

Hi! Thank you for your kind words and I hope you enjoy the pasta.  😀

 

I just picked all my ripe cherry tomatoes, put them in a large sheet pan, drizzled a couple tablespoons of olive oil and roasted them at 325 for 2 hours and 45 minutes.  I scraped them out of the pan (including the browned juice from underneath the tomatoes).  

 

They are heavenly!   Sweet and bright in flavor... Their concentrated flavor reminds me of Concord grapes.  I hope you try this because they are really good! 

 

Last year, I roasted all types of my leftover garden tomatoes, and froze them in different sized bags.  I used them thoughout the year and was sad when I reached for the last bag.
