This recipe makes about 4 to 6 small servings. Or, a great lunch or dinner meal for two.

Dressing:
1/3 cup vegetable oil
2 garlic cloves, minced
3 tbsp soy sauce
2 tbsp water
2 tbsp white vinegar
2 tbsp honey
1 tbsp sesame oil
1 tbsp fresh ginger, chopped

Salad:
1 cup frozen shelled edamame
6 cups baby greens (I used an oriental mix)
3 medium-sized carrots, shaved with a vegetable peeler
2 bell peppers, thinly sliced
1 cup fresh cilantro (or parsley), chopped
3/4 cup green onions, green parts only, thinly sliced
1/2 cup sea salted cashews

Place all of the dressing ingredients into a food processor and puree until smooth. Adjust taste to your liking and transfer mixture to a mason jar (or a bowl). Give your food processor a quick rinse and wipe (you'll use it soon!)

Cook the edamame by boiling it for 3 minutes. Drain and allow it to cool.(I put mine in the microwave). Meanwhile, add baby greens, peppers, green onions, and shaved carrots into a large salad bowl. Place the cooked edamame, cilantro or parsley, and cashews in the food processor and pulse 5 times to get a minced texture. Transfer to your bowl of greens a bowl and toss everything together. Drizzle with the dressing, toss gently and enjoy immediately.

Hi LoLa! You and me both on the salads! All winter long, I have added a yummy summer salad to the meal! I eat a nice portion of salad first before I hit the comfort food dish.

I have had trouble finding watermelon now though...LOL, but have used apples, pears, berries etc. fairly easily.

The other day I went to ITKWD, David's recipes, and printed off all the yummy salads that I haven't tried yet.

I have really enjoyed making all my own fresh dressings too! What a world of different from the store bottle of ingredients I can't even pronounce!

I can't wait to try this salad. Thanks for posting! I am always looking to see what you have to share with us next.

Thanks yet again for another wonderful recipe. I will most assuredly make this, once my head cold and cough go away: my tastebuds go to sleep when I get a cold and I can't taste a thing right now.

Hi Respect Life! Long time no 'see'! I could LIVE on salads all year long. I'm going to have to check out those salads on ITKWD. I'm curious now! I agree, homemade dressings are the best.
