These are the muffin version, not the cookie version. 

 

Tennessee Teacakes

 

1 stick of butter

1 cup packed brown sugar

1/2 cup sugar

2 eggs 

1 teaspoon vanilla

1 1/2 cup all purpose flour

1/2 teaspoon salt

 

Combine flour and salt, set aside.

Heat the butter and sugar i saucepan on low til melted and mixed together. Cool for 10 minutes. Add eggs and vanilla.Add flour to mixture, don't overmix. Place muffin liners in pan, fill 3/4 full. Bake at 350 for 18-20 minutes. The outside of the Teacakes will be crispy but the inside will be moist and soft. Sprinkle with powdered sugar while still warm. I use foil liners instead of paper ones.

Le Bus makes the best tea cakes I've ever tasted, but I'm going to make these even though it seems like too much sugar for 11/2 cups of flour.

No, I have never made tea cakes that are an actual cake. I do buy them at a local market that they get in from a bakery called Le Bus and they are delicious. They are substantial and not too sweet  and they have raisins in them and an egg wash coating on top.

I made these for my Senior Center cooking class. I didn't write down how many It made. Wanna say 12. 😊 Not sure.

This recipe didn't call any. 😊
