Do you think whipped cream would work as well? I don’t use cool whip.

I'll bet it would taste even better, but I'd suggest using a stabilizer if you want to keep it a couple of days. I've used gelatin as a stabilizer, with great success, but you can also add a couple of tablespoons of instant pudding mix into the cream when you whip it.

I've used cool whip to top a coconut cake and it was delicious. I spead coconut on top of the cool whip.

I don’t interpret a discrepancy at all; this recipe would make a 9x13 or 2 loaf pans.

My mom used to make this cake - with the cool whip and canned frosting - it was delicious! It's an especially easy desset for summer when you don't want to bake something.
