@bbqjudge Iuse about a half cup of ketchup mixed in meatloaf,and then how ever much i want on top for a spread.You will not be sorry making this recipe!

This is another great recipe for Mini Meatloaves.  We make them for an entree, appetizer, and as meatballs in spaghetti.  They are very moist and delicious.

 

Recipe - Mini Meatloaves (ground beef)

 

Ingredients:

 

1 egg

¾ cup milk (2%)

½ cup oatmeal

1 teas. salt

1 lb. ground beef

 

Optional:  1 tbsp. Worcestershire sauce, 1 teas. parsley, garlic, oregano, basil, onion

 

1/3 cup ketchup (+-)

¼ cup brown sugar

1 teas. prepared mustard

 

Directions:

 

Preheat oven to 350 degrees.

 

In large bowl combine egg, milk, oatmeal and salt.  Add options (all or preferred) if desired.  Add ground beef, mixing well.  Form mixture into 12 round mini loaves.  Place these in muffin or cupcake tins for ease in baking.

 

In separate bowl combine ketchup, brown sugar and mustard.  Spoon over each meatloaf.

 

Bake, uncovered, at 350 for 40 to 45 minutes.
