Taco Stuffed Avocados w. Chipotle Cream Sauce.

These were wonderful! My family loves avocados and these were so tasty! The only difference I made was that I added my meat of choice. I also doubled the recipe. :-)


4 avocados, sliced in half and pitted
1 tablespoon vegetable oil
1/2 pound ground turkey, chicken or beef
1/2 tablespoon taco seasoning
1 cup shredded cheddar cheese
1 cup sour cream
1 chipotle pepper in adobo sauce, minced
1 teaspoon adobo sauce
½ cup Cotija cheese crumbles
2 medium tomatoes, chopped
2-3 green onions, chopped
¼ cup cilantro leaves, chopped


Preheat the oven to 400 degrees F.

Place the avocados, cut side up, on a baking sheet or in a 9 X 13 baking dish. In a large skillet add 1 tablespoon of vegetable oil, taco seasoning and your ground meat of choice. Cook until brown. Then divide the meat among the avocados. Sprinkle evenly with cheddar cheese and cook for 10 minutes or until the cheese has melted.

While the avocados are in the oven, mix the sour cream with the chipotle peppers and adobo sauce. Add 1-2 teaspoons of water to thin to your liking. 

Garnish the avocado tacos with Cotija cheese, chopped tomatoes, green onion, cilantro and drizzle with the chipotle cream. Sprinkle with cilantro and serve warm.

Sounds yummy - gonna try this one.  I've been metza metza with avocados, basically not much taste - unless it's in guacamoli.  But, your recipe sounds very appealing.

 

I've never seen cotija cheese, is there another name for it or can you recommend a substittute?  Thanks for posting this recipe!

I substituted feta for cotija in another recipe I made when I couldn't find it.

Wow, great mixture!!! Delish!!!

 

I'm trying to learn to like avocados so I am going to try this with one avocado & a couple baking potatoes.

 

The chipotle cream sounds great & could be used for so many things.
