This is a little different take on a tuna sandwich. I always have cans of tuna in the pantry.

1 6 oz can tuna, drained well
2 T finely diced red bell pepper
2 T mayonnaise
Kosher salt and fresh ground pepper to taste

4 slices of bread
2 slices of cheese (provolone or fontina)
2 T butter
2 large eggs, beaten

In a bowl mix tuna, red bell pepper, mayo, salt and pepper. Spread the mixture evenly on two of the bread slices. Place cheese on top and second bread slice.

Preheat a nonstick pan over medium heat. Add butter and swirl. Dip each sandwich in beaten eggs (like you are making french toast). Cook until golden brown. Flip and cook until golden brown and cheese melts.
