This one of the "regulars" at our house. This is our absolute favorite mac and cheese. My husband requests it all the time. It's awesome, give it a try!

TOMATO MAC & CHEESE

2 cups (uncooked) elbow macaroni

2 cups (8oz) shredded cheddar cheese (I add a little more)

1 can stewed tomatoes

1 can cream of mushroom soup

2 Tbsp of butter

1/4 cup onion (chopped)

Cook the pasta as directed. Meanwhile...Saute onion in the butter in medium sauce pot. Add tomatoes, soup, and cheese to the sauce pot. Stir constantly until well blended, and cheese melts. Drain pasta, and add to cheese mixture. Stir until mixed through the pasta. Season with salt and pepper to taste. Pour into a 2 qt baking dish and bake uncovered for 30 minutes at 350 degrees.
