I make this too, but also put in some celery cut in 1" pieces ... gives it a nice crunch ...
Forgot to say, I don't use the sugar ...

I would use slivered, blanched almonds or Marcona almonds.
If you can't do nuts, you might try roasting chickpeas in the oven and adding those for a bit of a crunch.

Pine nuts are expensive. I get them in the bulk section but if I do not have any I just leave them out.
