I got this recipe from my local NPR station.

1/2 pound Thai medium rice noodles
4 cups shredded cooked chicken
2 medium carrots, thinly sliced into match sticks
1 red bell pepper, thinly sliced
1 English cucumber, halved lengthwise and thinly sliced crosswise
1 green onion, white and green, thinly sliced
1/3 cup cilantro or Thai basil, roughly chopped for garnish
1 lime sliced

DRESSING:
2 T rice vinegar
2 T soy sauce
1/2 T fish sauce
1 T sesame oil
1 T brown sugar
1 T Sriracha
1 large garlic clove, finely minced
2 T finely minced fresh ginger root

Cook noodles according to package directions. Drain and rinse with cold water. Drain well and put into a bowl with vegetables and chicken.

Stir together dressing ingredients in a small bowl. Pour over noodle mixture and toss to coat lightly. Squeeze a little lime over the top.

I doubled this dressing but did not use it all. I also chopped some dry roasted peanuts to sprinkle over the top. Hope you enjoy it!

I'm not a big fan for noodles but everything else sounds delish. I'll give it a try. Thanks for postingSmiley Wink

I recently tried my first Thai recipe for Thai Pad Noodles and really liked it. I had to sub oyster sauce for the fish sauce since I didn't have any of that but it was really good.

I have a big unopened bottle of Sriracha that I bought for who knows what! This will give me a chance to try it. 1T? Guessing this would be on the spicy side?

Thanks so much for the recipe! I DO love recipes with noodles, but must now eat gluten free, so appreciate any noodle/pasta recipe with a rice noodle in it. Also love Thai.

RespectLife - If you do not like really spicy food I would cut down on the Sriracha. It does have a kick. Maybe try a teaspoon first......

Thanks DiAnne, I LOVE spicy but DH is a wimp of enormous magnitude!! I'll probably take your suggestion and try a tsp first.

Sounds like a really yummy salad DiAnne, thanks for sharing!

Respect, if you love spicy, open that bottle!! My mouth is watering just thinking of it! I love to use it even just on sandwiches, like in place of mustard.

Thanks, bigkat...you are right! Doing no good sitting in the pantry all sealed up! Can always give a shot just to my dish!
