I just received an old cookbook put together by the staff at the small town hospital I was born in 60+ years ago. The book was made in 1976 and at that time a very dear aunt of mine worked at the hospital. What a wonderful trip down memory lane reading recipes she had submitted, since she is no longer with us and I miss her terribly.

I thought I would share this one with all of you. I remember her fixing this many times.

Swiss Steak in Foil

1 c ketchup
1/4 c flour
2 lb. round steak (1 in. thick)
1 large onion, sliced
2 T lemon juice
Salt to taste
5 ft. length of aluminum foil, folded double

Combine ketchup and flour. Spoon half this mixture into the center of the foil. Place the steak on top and season with salt. Cover meat with onion slices and remaining ketchup and flour mixture. Sprinkle with lemon juice. Fold foil over and seal edges securely. Place in shallow baking dish and bake at 350 for 2 hours or until meat is tender. Serve with buttered, boiled potatoes.
