Swiss Miss Fat-Free Tapioca Pudding

1/4 cup cornstarch

5 cups skim milk

1 cup fat free sweetened condensed milk

dash salt

1/4 cup plus 1 tbsp tapioca

1 tsp vanilla

Combine cornstarch with skim milk. Add sweetened milk, salt and tapioca. Bring to a boil stirring constantly till it thickens (don't under cook or it won't thicken later). Remove and cover 30 minutes. Stir in vanilla. Cover with plastic wrap and chill a few hours.

(1 can sweetened milk = 1 1/3 cups)

(2 cans = 2 2/3 cups)

(3 cans = 4 cups)

Extra milk can be frozen
