I tried out a new recipe tonight.  I saw it a couple of weeks ago - and it sounded tasty.

There are tons of similar recipes online - the one I used includes a can of black beans, two sweet potatoes, can of corn, can of diced tomatoes, taco seasoning, coriander, and diced onion and diced garlic - water (for taco seasoning) and olive oil.

You can put whatever toppings - I had some guac.  Tomorrow - I'm going to pick up some sour cream for dopping.

You can make it as spicy as you like - you can control spices.

This looks interesting.  I have never had the imagination to put sweet potatoes in.

Neither did I ... I'm a recipe junky and like highly flavored dishes - so I was browsing various recipes and came across this combo in quite a few unusual places.

At allrecipes website - you can search by ingredients - whenever I have a "taste" for something or want something new to make with an old standby  - I go recipe hunting.

Corn or flour tortilla?

How do you suggest preparing the tortilla before filling? 

• deep fry
• warm up on a gas/electric element on stove
• microwave between moist towels
• stove top in a steamer basket
• other?
