Just came across this interesting dish in the latest issue of Kraft Foods "Food & Family" magazine. I think it would be good with any type of sausage, including ground pork sausage and a different type of cheese, such as parmesan or swiss.
SWEET POTATO AND CHORIZO FRITTATA
6 oz. Mexican chorizo
1 (1/2 pound) sweet potato, peeled, cut into 1/2-inch pieces
1 chopped red pepper
3 sliced green onions
1/4 cup water
6 eggs
1/2 cup sour cream
1 cup shredded pepper jack cheese
Heat oven to 350 degrees.
Cook chorizo in large nonstick skillet over medium heat until done, stirring often, then drain, reserving 1 tablespoon drippings in skillet.
Spoon chorizo into a 9-inch pie plate sprayed with cooking spray.
Add potatoes to reserved drippings, cook 4 minutes, stirring often.
Add peppers and onions; cook, stirring constantly, 2 minutes or until crisp-tender.
Add water, cover, cook 3 minutes. Do not stir.
Spoon potato mixture evenly over chorizo.
Whisk eggs and sour cream until blended; pour over potato mixture.
Top with cheese.
Bake 35-40 minutes or until knife inserted in center comes out clean.

I use chorizo alot--but not sure about the sweet potatoes in it---especially with cheese or the red pepper----would have to use white spuds
