1/2 small yellow onion sliced thin

2Tbsp Olive Oil

1lb sweet potatoes. grated

1Tbsp deli style mustard

Preheat over to 350.

Heat oil in large skillet over medium heat

Add onion and cook until soft 5 to 6 minutes

Mix shredded sweet potatoes with onions and mustard

Mold the mixture into separate cups in a muffin pan

Bake for 30 to 35 minutes or until crisp

We had these for breakfast filled with scrambled eggs and crumbled bacon. I think you could fill these with anything you like chicken salad. potato salad or whatever you like. They were really good.
