My grandchildren love these as a healthy snack alternative.
Servings: 4
2 - 5" sweet potatoes
Olive oil spray
1/2 t. herb blend
Peel and cut sweet potatoes in half diagonally. Use a mandolin or other slicer to cut into 1/8" slices. Put slices in a bowl of ice water for about 15 minutes to wash off some starch. Pat dry with paper towels.
Heat oven to 425 degrees. Line cookie sheet with aluminum foil. Spray generously with olive oil, and put the sweet potato slices in one layer.
Bake about 8 minutes and then carefully turn over. Bake another 6 minutes. Let cool on a rack, and sprinkle with the herb blend.
