Re: Surprise! Yummy Brussels Sprouts!

[ Edited ]

This salad uses raw Brussels sprouts:

3 tbsps lemon juice

2 tbsps Dijon mustard

2 tbsp minced red onion

1 tsp minced garlic

1/2 tsp salt

6 tbsps extra-virgin olive oil

1 lb Brussels sprouts, halved and sliced thin (I shred them in my food processor)

1/2 cup shredded Parmesan (I like the tang of Romano if I have it)

Whisk lemon juice, mustard, onion, garlic, and salt in serving bowl.  Slowly whisk in oil until well-blended.  Toss with sprouts and let sit for 1 hour.  Fold in cheese before serving.

@ECBG   Do you defrost the frozen sprouts first, or prepare them frozen?

I love Brussels sprouts so much I'd probably buy BS ice cream if they made it! LOL

Re: Surprise! Yummy Brussels Sprouts!

That is how we make them. Also, broccoli flowettes. And, asparagus spears.

Course ground -salt & pepper

Drizzle of olive oil

Foil -absolutely no clean up!

Except I put my oven up higher & shorter cook time.  Browns a little more, while still maintaining more crispness.

! Yummy ! One way way to get me to eat my veggies! 👍🏻

@I bought the frozen Steamed Fresh from Birdseye, I believe.  I put them in frozen.  They're SO small, they "worked"! (Or use fresh!).

You could also toss green pepper strips, muchrooms, 1/4 tomato wedges, thin cut squash and zucchini and after, drizzle with Greek or Balsamic Paul Newman's salad dressing and a light sprinkle of Parmesan!

The article mentioned serving cold, but I think not!Smiley Happy
