I pulled this from my files for dinner this evening.  I've had the recipe so long I do not remember the source.  

 

Summertime Salad


Serves 8 to 10

2  5 ounce packages romaine lettuce, chopped
1 head iceberg lettuce, chopped
1 cup shredded Swiss cheese – mozzarella or any other cheese can be substituted
1/2 cup sweetened dried cranberries (Craisins are fine)
1 cup unsalted cashews (chunky pieces, not crushed)
2 Granny Smith apples, peeled and diced
2 Red Delicious Apples, peeled and diced
2 Pears, peeled and diced

 

Combine all ingredients in a large serving bowl; toss to mix.

 

Lemon Poppy Seed Dressing

1/3 cup plus 2 Tablespoons apple cider vinegar
1/4 cup plus 1 Tablespoon fresh lemon juice
1 tablespoon plus 2 teaspoons Dijon mustard
1 tablespoon plus 2 teaspoons honey
1 1/4 teaspoons onion powder
½ teaspoon kosher salt
1 1/4 cups grapeseed oil
1/4 cup plus 1 Tablespoon poppy seeds

 

Whisk together vinegar, lemon juice, mustard, honey, onion powder and salt in a bowl. Slowly drizzle in grapeseed oil, whisking constantly, until combined. Stir the poppy seeds into the mixture.

 

Pour salad dressing over salad and toss.

Thanks that salad sounds like it's right up my alley. The dressing sounds like one that I make except I use red wine vinegar, I'm anxious to try your version. Thanks again.

That sounds really good. Does it last overnight, if you don't eat it all in one meal?

@dusty   I cut the salad quantity down for DH and myself, so there were no leftovers (other than the dressing, which I did make in full).

That sounds very tasty.  I like the fact that the dressing does not have a lot of sugar in it like many dressing for fruit salads.  I also will be cutting this down.

@dusty  Just to be clear:  Although I made the full amount, I did not use all the dressing on the decreased salad. Half or more of it is in the refrigerator.

I love and appreciate salad recipes as they are the easiest to cut down for those of us that cook for one.  This one looks delicious, thank you so much for posting it @IamMrsG!

@Dusty1  Please forgive me if I am being too elementary in my answers to you.  I have a phobia about misleading cooks with recipes I recommend. On that, here is an UPDATE about last evening's salad:

 

As I said, I decreased the quantities to make two salads.  That left me with half of each apple (I ate the remaining half of pear). I refrigerated those halves in acidulated water (water with lemon juice added) overnight. The acid helps to prevent the apples from turning brown.  

 

Indicative as to how much we enjoyed the salad last night, I used the leftover apples to make another one for lunch today. After an overnight soak, the apples did absorb a little of the lemon flavor, but not enough to adversely affect them.  There was a little beige on the outside of the Red Delicious apple, which could have easily been sliced off, but it did not bother me.

 

The real change from last night to this afternoon was in the Lemon Poppy Seed Dressing.  It 'ripened' into a delicious dressing, actually making the salad better this afternoon than it was last night!  DH and I score recipes on a 1-5 basis.  Last night's salad was a 3☆ rating.  Today's lunch was 4☆s.
