@Dusty1  Please forgive me if I am being too elementary in my answers to you.  I have a phobia about misleading cooks with recipes I recommend. On that, here is an UPDATE about last evening's salad:

 

As I said, I decreased the quantities to make two salads.  That left me with half of each apple (I ate the remaining half of pear). I refrigerated those halves in acidulated water (water with lemon juice added) overnight. The acid helps to prevent the apples from turning brown.  

 

Indicative as to how much we enjoyed the salad last night, I used the leftover apples to make another one for lunch today. After an overnight soak, the apples did absorb a little of the lemon flavor, but not enough to adversely affect them.  There was a little beige on the outside of the Red Delicious apple, which could have easily been sliced off, but it did not bother me.

 

The real change from last night to this afternoon was in the Lemon Poppy Seed Dressing.  It 'ripened' into a delicious dressing, actually making the salad better this afternoon than it was last night!  DH and I score recipes on a 1-5 basis.  Last night's salad was a 3☆ rating.  Today's lunch was 4☆s.
