I came across this recipe on the web and I thought it sounded really good. I am going to make it next week.

Summer Vegetable Spaghetti

2 cups small yellow onions, cut in eighths

2 cups (about 1 lb) tomatoes, peeled and chopped

2 cups (about 1 lb) green and yellow squash, chopped

1-1/2 cups (about 1/2lb) fresh green beans, cut

2/3 cup water

2 T fresh parsley, chopped

1/2 tsp chili powder

1 clove garlic, minced

1/4 tsp salt

pepper to taste

1 can (6oz) tomato paste

1 lb box of spaghetti

1/2 cup Parmesan cheese

Combine first 10 ingredients in a large saucepan. Cook for 10 minutes, then stir in tomato paste. Cook gently for 15 minutes, stirring occasionally, until vegetables are tender.

Cook spaghetti in unsalted water according to package directions.

Spoon sauce over well drained spaghetti. Sprinkle with Parmesan cheese.
