I'm looking for some different cookie recipes that say "summer." Does anyone have one that is not chocolate chip? TIA! ![]()

I'll have to look, but there's chocolate drop cookies, no bake and not chocolate chips.
Choc oatmeal cookies:
1/3 C. melted butter
2 C. sugar
1/2 C. milk
1/3 C. baking cocoa
1 tsp. vanilla extract
1/2 C. creamy peanut butter
3 C. quick-cooking oats, uncooked
In a saucepan over medium heat, combine butter, sugar, milk and cocoa. Bring it to a boil; cook for 1 minute. Remove from heat: stir in remaining ingredients. Mix well; drop by rounded teaspoonfuls onto wax paper. Let cookies cool completely. Makes 2 dozen.

Peanutty Clusters
2 lbs. white melting chocolate, chopped
4, 1 oz. squares bittersweet baking chocolate, chopped up
12 oz. pkg. semi-sweet chocolate chips
24 oz. jar, dry-roasted peanuts
Combine all ingredients except nuts in a slow cooker. Cover and cook on high for one hour. Reduce setting to low; cover and cook another hour, until the chocolate is melted, stir every 15 minutes. Stir in nuts. Drop by teaspoonfuls onto was paper; let stand until set. Store covered at room temperature. Makes 3-4 dozen pieces.

But, if chocolate isn't what you want, I have this to try yet.........
Lemon Bars
1 & 1/2 C. plus 3 T. all-purpose flour, divided
1 C. powdered sugar, divided
3/4 C. Butter, softened
3 eggs, beaten
1 & 1/2 C. sugar
1/4 C. lemon juice
In a large bowl, combine 1-1/2 C. flour, 2/3 C. powdered sugar and butter.
Mix it well; pat into a greased 13 x 9 baking pan. Bake at 350 degrees for 20 minutes; remove from oven. Whisk eggs, sugar, remaining flour and the lemon juice together until frothy; pour over hot crust. Bake at 350 degrees for 20-25 minutes, until light golden.
Cool in pan on a wire rack. Dust with remaining powdered sugar. Cut into bars.
Makes 3-4 dozen.

I almost didn't make these because I thought......lavender, to eat? Ick! But I was wrong, these are delicious and easy to make.
LAVENDER SHORTBREAD COOKIES
2 sticks softened butter
1/2 cup sugar
2 tsp lavender buds (I got mine from Etsy)
1 tsp vanilla
2 cups flour
1/2 tsp salt
Beat sugar and butter until light and fluffy. Mix in other ingredients. Form into 12" log on wax paper. Wrap and refrigerate until firm.
Slice into 1/4" rounds. Sprinkle with lavender or purple sanding sugar. Bake at 325 for 18-22 minutes.

@qualitygal - I've made something similar to the oatmeal ones before, and I've made lemon bars, but I've never made anything like the second recipe.
@Jasmine19 - These sound wonderful and different. We have a lavender farm not too far from here. I will try to go there next week.

I love lemon bars especially in the summer when it's so hot outside. This recipe is really easy to make since it starts with a cake mix. If you click on the recipe title, it will take you to the food blogger's page where the recipe is posted.
