This salad is courtesy of TOH...I made this for lunch today and loved it.
Summer Bean Salad
1/2 lb fresh green beans
1 plum tomato, quartered
1 hard cooked egg, chopped
2 T chopped red onion
3 T Italian salad dressing
Place beans in a small saucepan, cover with water and boil for 7 minutes. Drain and immediately put beans in ice water. Drain and pat dry.
In a small bowl mix the beans with tomatoes, chopped egg and onion. Drizzle with dressing and toss gently to coat.
Serves 2
