Suggestions for a light summer menu for a lunch I'm hosting next week?

I have a few of my colleagues here for lunch every summer, just before we return to school.

 

Does anyone have a suggestion for a light, summer entree?

Chicken salad stuffed tomatoes on a bed of lettuce or salad and a nice date/nut bread on the side, or grilled chicken breasts and a fruit salad, or egg salad sandwiches or a seafood salad.

I love the idea of the chicken salad stuffed tomatoes! Do you have a particular recipe that you like?

I use the shredded (not chunk) canned chicken, add mayo until it is all incorporated then add celery diced very fine and stir it up. At the end I add chopped pecans and red grapes cut in half,

I once had the most delicious chicken salad at the Elks for an event and when I asked if I could have the recipe this was it.I would never have thought to use canned chicken but it was so good. I've made it this way ever since.

I like the idea of chicken salad with grapes and pecans mixed in and served on croissants, along with LoLa's recipe for Rainbow Summer salad, a bite size sweet for dessert, and lots of sweet tea or fresh lemonade. Best wishes with whatever you decide on.

It probably isn't going to please anyone to see recipes posted a second time, but here's a salad that I posted a while ago, and shortly afterward, someone made an excellent suggestion to top it off with some chicken.  Sounds good to me as a summer lucheon dish, along with some sort of delicious bread on the side.

 

SALAD GREENS w/ MANDARIN ORANGES, DRIED BERRIES & VINAIGRETTE

 

4 medium heads Bibb lettuce (other types OK)

 

2 16-ounce cans mandarin orange slices (used when dressing salad just before serving)

 

Dried cherries or cranberries (only a few tablespoonfuls of these are needed to mix in when you dress the salad)

 

Wash and dry lettuce, drain oranges to mix in when you dress the salad.

 

Vinaigrette

1/2 cup minced red onion

3/4 cup sugar

2 tsp. dry mustard

2 tsp. salt

2/3 cup red wine vinegar

2 cups oil

3 Tbsp. poppy seeds

Mix first 4 ingredients in blender until onion is finely chopped.

With blender running, pour in vinegar. 

Slowly pour in oil.

Stir in poppy seeds.

Refrigerate and use on  salad just before serving.

I like the Tarragon Chicken Salad recipe from the Silver Palate cookbook. I don't know how to post a link.It is chicken poached in creme fraiche,Helman's mayo,sour cream, walnuts, tarragon,celery,etc. It's 

delicious.

I love the mandarin salad mine you mix with fresh spinach & I use that same vinagrette!     You could add grilled chicken to that as long as you don't add the dressing until the last minute.

Layered Tortellini-Spinach Salad Recipe

 

 

TOTAL TIME: Prep/Total Time: 25 min.YIELD:18 servings


Ingredients
1 package (19 ounces) frozen cheese tortellini
2 packages (6 ounces each) fresh baby spinach
6 cups shredded red cabbage
1 pint cherry tomatoes, quartered
3 tablespoons thinly sliced green onions
1 package (1 pound) sliced bacon, cooked and crumbled
1 bottle (16 ounces) ranch salad dressing


Directions
1. Cook tortellini according to package directions. Meanwhile, in a large salad bowl, layer the spinach, cabbage, tomatoes and onions.
2. Drain tortellini and rinse in cold water; place over onions. Top with bacon. Drizzle with salad dressing; do not toss. Cover and refrigerate until serving. Yield: 18 servings.


Nutritional Facts
1 serving (1 cup) equals 253 calories, 20 g fat (5 g saturated fat), 16 mg cholesterol, 434 mg sodium, 12 g carbohydrate, 1 g fiber, 6 g protein.

I make the Tarragon Chicken Salad with rotissiere chicken, celery, pecans and mix with Mayo & Miracle Whip mixed.  One of our favorite meals.
