@Dazlin If you're just looking for flavor and not texture, I use Baco Bits. I basically make the same soup but more vegetables and a sweet potato.

HOME RUN!  Delicious!

I made it yesterday.  I did use pancetta...and went ahead and used both the Smokey Paprika and liquid smoke anyhow!  Tee hee!

This soup is a keeper and I thank you!  Gave me a reason to dust off that Vitamix I never should have purchased.

Glad you liked it!!    I would imagine we can substitute any veggie, and make this delish.    I did something similar a while back, that called for broccoli and potatoes, and lots of garlic cloves.  It turned out like a cream of broccoli soup, but NO cream added😃

That is what I liked about this soup @Dazlin !!

It tasted as a cream soup would, yet was cream free!

I had previously purchased cartons of Red Pepper Soup from Trader Joe and Wegman's both.

This homemade version was far superior!
