I asked Alexa and she said heavy cream is a good sub for cream cheese.

@OKPrincess

That's a great suggestion, which I appreciate, as I bake for my family and friends, but will usually taste to make sure it came out alright.  However, there's one ingredient in cream cheese which brings on migraine, so can no longer use it.

Re: Substitute for cream cheese?

Thanks to all of you who responded!  I just wanted to let you know I went ahead and made the cake using Greek yogurt.  It is edible, but not something I would serve to company.  It did not rise in the usual way, nor is the taste the same.  But lucky for me DH is not fussy!

Re: Substitute for cream cheese?

I would have used the whipped cream cheese.  It's almost the same as the block only someone already did the whipping for you.

There is a long list of reasonable substitutions on housewifehowtosdotcom if you choose to use them.  I have used some of these substitutions and others not listed here since I come from a family of restauranteers and cooks (now called chefs) and did not choose that as my career path but learned a lot.

Some things cannot be substituted in some recipes as in others.  I rarely substitute ingredients in a cake unless I am very sure of what I am doing.  Some things just do not fluff up and rise as others.

I experimented with cooking a lot in early marriage for lack of having ingredients, especially when we were in Europe (when it was not economically feasible to call my mother) and spent more money experimenting than buying the necessary items.

However, like the OP said of her husband, mine is not choicy either and he always likes everything I cook (whether he really does or not, he says he does).  He fears retribution (having worse food the next day).

Re: Substitute for cream cheese?

@Elbelle  I would not use Greek yogurt.  I would use the whipped cream cheese but use more.  Cat Very Happy
