Substitute for Andouille Sausage?

I have Italian Sausage in the freezer that I would like to use. My son does not like peppers or tomatoes. So I was thinking about making a Jambalaya. This recipe does not call for tomato. But it says to use andouille sausage. 

Do you think I could use the Italian sausage instead?

@drizzellla  If you or your son never tasted "Jambalaya" (the real thing) then use your Italian sausage.  Ya'll wouldn't know what you're missing.

I started making Jambalaya.  The first time I made it, I used Italian hot sausage because it was in the freezer.  It didn't cut as well as andouilie sausage.  My daughter definitely doesn't like it with the italian sausage, said it's "grainy."  My husband prefers Jambalaya with the audouilie.  The recipe I use is "Best Jambalaya Recipe" by AllRecipes.  Comes with a video.  It's so easy and delicious and I never cared for jambalaya before.  Sometimes I add shrimp at the end.

@drizzellla  I never heard of making Jambalaya without peppers and usually tomatoes. Maybe you should use your Italian sausage to make an Italian dish. Maybe sausage with broccoli rabe and orechiette, or some kind of Alfredo dish.

@drizzellla- I wouldn't use the italian sausage because of the flavor profile.

 

I would recommend smoked sausage.  Hillshire brand is a good choice.

I mix ground beef and Mild Italian Sausage among oher things in my spaghetti sauce.  In general, I don't like tomatoes. but I will eat a spaghetti meat sauce as long as there are not hunks of tomato in it.

I'd stick to italian recipes with the italian sausage, but I have never had jambalaya so can't speak to that.

Thanks for your answers, Went out and bought salmon. Going to have broiled salmon for dinner.

 

Bought the Italian sausage so I could make lasagna, Then my son scrapped all the tomato sauce from a piece of lasagna. Decided to not bother making it again. He ended up throwing about 1/2 of his piece away.
