Thank you for the recipe. I will definately give it a try. Unfortunately he does not like onions or zucchini. But he has learned to pick out the offending food items. 


The recipe sounds so good to me. So I am making it. Thanks for posting it. Have to buy zucchini first.

My children did not like pepper and onions in anything!  I would put the"veggies" in a recipe in the blender and puree them...put in the sauce, etc.  They loved the flavor but did not want to bite a chunk of any of it!

 

My daughter in law had a difficult time trying to figure that out!

@Icegoddess I like tomatoes but I don't like hunks of cooked tomato in anything.  I pick them out.

My son, also, would eat tomato sauce without chunks. Until a month or so ago. Now he scraps all tomato sauce off everything.

@Hoovermom I agree!  I was actually going to recommend linguica, which is a Portuguese sausage similar to chorizo, but not as spicy.  I have a couple of recipes for jambalaya and always add linguica.  Great flavor!  We love linguica!  Woman Happy  It fries up nicely and gets a bit of a char if cooked long enough.  I use it when I make a frittata, baked beans, etc.

Chorizo is DISGUSTING. I can't believe anyone would eat it.

There is really no good substitution for andouille  Perhaps a really good smoke sausage such as Veron OR Savoie. Also no tomato in jambalya unless you are cooking creole
