I have tried many recipes to make sub rolls. This one reminds me of Jersey Mikes Sub roll. Not soft and quishy, but firm and wonderful.  

 

2 pkg. Active Dry Yeast. 

1 Tablespoon sugar

1/2 cup warm water

1/3 cup oil

3 cups All Purpose Flour (15oz)

3 cups Bread Flour (12 3/4oz)

3 Tablespoon sugar

2 teaspoons salt

1 1/2 cup warm water.

 

Mix the yeast, sugar and water, let set for 5 minutes. Add the oil, flours, sugar, salt and water. Mix the dough by hand or with a stand mixer with a dough hook. If needed add 1/2 c all purpose flour to knead the dough. Let the dough double in a greased bowl. Punch down and shape into sub rolls, hot dog buns or hamburger buns. Let rise again until double. Bake at 400* for 20 minutes. Oven baking times may vary.

@Barbarainnc, I am going to try this, so thank you.  I grew up in Philly and judge every sandwich roll by the Amoroso rolls that I always had on my sandwiches.  Cannot seem to find them anywhere in my area, so these might just work for me.

The next time that I hear salt and ice together, it better be in a margarita!
