This is another winner from Closet Cooking. I made this last night, and will definitely be making them again!
Stuffed Zucchini with Sausage & Cheese
2 large zucchinis
1 T oil
2 Italian Sausage (casings removed)
1 small onion, chopped
2 cloves garlic, chopped
2 T white wine
2 tomatoes, chopped
1/2 tsp oregano
salt & pepper to taste
1 T basil, chopped
1/2 cup mozzarella, grated
1/4 cup parmigiana reggiana, grated
Cut the zucchini in half lengthwise and scoop out the middle.
Chop the zucchini that was scooped out and set aside.
Heat oil in pan. Add the sausage and brown. Add onion and saute until tender. Add garlic and saute until fragrant. Add the wine ( I used chicken broth) and deglaze bottom of pan. Add the chopped zucchini, oregano, salt & pepper, and tomatoes; cook until most of the liquid has evaporated.
Remove from heat and stir in basil. Let the stuffing cool. Stir in 1/2 of the cheese.
Fill the zucchinis with the stuffing and top with remaining cheese.
Bake in a preheated 400 degree oven until the zucchini is tender and the cheese is golden brown...about 20 minutes.
