Stuffed Green Pepper Soup
1 lb ground beef
1 small onion, diced
1 large bell pepper, diced
1 (29 oz) can diced tomatoes
1 (10 oz) can tomato soup
1 (14 oz) can chicken broth (or beef broth)
2 cups cooked rice
1 tbsp sugar
1 tsp garlic powder
salt and pepper, to taste
shredded cheddar cheese to put on the top
In a large pot, brown and crumble ground beef along with diced green peppers and onion over medium-high heat.
When meat is thoroughly cooked, drain excess grease from beef mixture.
Put beef mixture back into pot.
Add in diced tomatoes, chicken (or beef) broth and tomato soup.
Stir.
Then add rice.
Stir again.
Then stir in seasonings; sugar, garlic powder, salt & pepper (to taste).
Cover and let soup simmer on low heat for about 30 minutes to let all the flavors blend. (The longer it simmers, the thicker it will get.)
Serve with shredded cheddar cheese on top of each serving.

@LilBitMissty with the exception of the peppers the recipie
is similar to a beef and spice casserole I've made for years.
Cream or mushroom soup instead of broth, thyme, minute rice, oregano. Plus other ingredients you said . Simmer in pan after browning beef. Put in casarole dish with cheese strips and olives if wanted on top. Bake about 350 about 30 min.
I don't cook now much but that one works and is easy, you can vary ingredients. I might try it with the peppers.

It is simmering on my stove right now and it smells wonderful! I changed two or three things: I also added a chopped red pepper, I used fire roasted red pepper and tomato soup and a bit more onion. We will enjoy it after church this evening - thanks again for posting!

This recipe looks scrumptious! Minus the sugar. Eee gad the tomato soup alone contains 10 g of sugar! But I'll make it anyway, I'm sure it'll be good!

So leave that whole tablespoon of sugar out and instead of tomato soup use tomato sauce or thinned out tomato paste which both have less sugar.
