Stuffed Green Pepper Soup

1 lb. ground beef
1 envelope dry onion soup mix
1 can (14.5 oz.) diced tomatoes
1 can (15 oz.) tomato sauce
2 large green peppers, chopped
1 beef bullion cube
1/8 cup brown sugar, packed
1 cup cooked white rice
Mozzarella cheese, shredded

In a large pot, thoroughly brown the ground beef. Stir in soup mix. Add all remaining ingredients except rice and cheese, and bring to a boil.

Reduce heat and simmer for about 35 minutes or until peppers are soft.

Add rice and heat for another 5 minutes.

Spoon into bowls and sprinkle with mozzarella cheese.

Makes 4 servings.
