This recipe is from a dear friend who was a caterer. I have made it many Christmas Eves to serve for Christmas morning breakfast. There is onlly one word for it--- scrumptious.

Stuffed French Toast

1 loaf Texas bread

1 dozen (12) eggs

4 cups milk

1 8-oz. pkg. cream cheese

1 cup maple syrup

1/4 c. melted butter

1/4 c. sugar mixed with 1 T. cinnamon

Spray an 11 x 14 glass pan (or a deep lasagna pan) with a non-stick spray.

Cut the bread into 1" cubes. Put half of the bread in the baking dish. Cut the cream cheese into 1/2" cubes (dip knife in hot water ifit sticks). Arrange the cream cheese on top of the bread. Cover with the remaining bread cubes.

In a large bowl, whisk the eggs, then add milk, melted butter, and syrup until well blended. Pour slowly over the bread mixture in the baking dish, making sure that all the bread is wet. Cover loosely with wrap and refrigerate overnight.

In the morning, take the dish out of the refrigerator and let it sit on counter while the oven is heating to 325°. Sprinkle the sugar-cinnamon mixture over the top and bake for 45 minutes or until a knife inserted in the middle comes out clean. NOTE: If you happen to insert your knife where there is cream cheese, it will not be clean---insert where there is egg/milk mixture). You may have to bake the dish for extra time depending upon how cold it was when you put it in the oven.

Serve with warm syrup or sprinkle with confectioner's sugar. Good served with bacon and/or sausage, fresh fruit, juices, and coffee/tea.
