Strawberry Shortcake Pudding Cookies šŸ“

Something for Valentine's Day or anytime! I plan to pick up the limited edition Shortcake flavored M&Ms candies at Target this week

Ingredients

  • 1 cup butter room temperature
  • 1 cup powdered sugar 
  • 1 teaspoon vanilla extract
  • 2 eggs 
  • 2-1/4 cups all purpose flour 
  • 1-3.4 oz french vanilla instant pudding mix 
  • 1 teaspoon baking soda
  • ½ package white chocolate morsels
  • 1 package Strawberry Shortcake flavored M&Ms candies 
 

Instructions

  • In the bowl of an electric mixer, beat butter, powdered sugar, and vanilla until light and fluffy.
  • Add eggs gently, one at a time, whisking until combined.
  • If your electric mixer has a paddle attachment, add it and turn the mixer on low and slowly add the flour, pudding mix and baking soda. (If not, use your regular mixer attachment on low and add ingredients slowly.) Mix until combined.
  • Add white chocolate morsels and hand-stir until well combined.
  • Refrigerate dough for 30 minutes.
  • Pre-heat oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • Use a medium sized cookie scoop to scoop out the dough into balls, spacing them about 2 inches apart on the baking sheet.
  • Press the M&Ms candies randomly on top of the cookie dough balls, 5-6 M&Ms each cookie.
  • Bake for 10-12 minutes, until golden brown on the edges.
  • Cool for 1 minute on the baking sheet then transfer to a wire rack to cool for 30 more minutes.

@Chi-town girl    I want Strawberry shortcake M&M's!    I didn't see them yet.  These cookies look so good.  My husband and son's love strawberry ANYTHING!  hahahaha   I hope I can find those M&M's.   As always thanks for all the cool recipes.

They look festive and sound delicious.  But I have a reservation about using M&M's in cookies..  I haven't used them myself, but, in cookies others have made, they are often hard as rocks.

@ValuSkr   I often use M&M's in cookies and have never had that problem.  I wonder if they were those candy bits that look like M&M's that were in the cookies that you tried?    I'm going to make these this weekend.  As soon as I get my hands on those Strawberry M&M's.

Thanks for posting another good recipe here @Chi-town girl .  I will try these if I find the M&M's.  Before Christmas I baked cookies putting red and green M&M's into the batter.  I did not think they came out very well.  I notice this recipe says to put M&M's on top of the cookie dough balls.  That may be the better way to do it.

@walker - you're welcome! I've never made cookies with a pudding ingredient. This cookie recipe sounds so yummy šŸ˜‹

@walker   Yes, you may be onto something.  In the cookies I've had with M&M's, they were baked in - and the M&M's were H-A-R-D.  Maybe if they were placed on top of the cookies, they'd be better.
