Stouffer's Apples and cranberries

Years ago I ate at a friend's house and she served a side dish made with Stouffer's Escalloped Apples and canned cranberry sauce.  It was delicious.

 

Do any of you fix this or know how to fix it.  She cooked it in the oven, it was not a relish, and served it as a side dish.  TIA

Perhaps you've already done this, but I just did an internet search for "Stouffers Apple Cranberry" and came up with a number of websites and recipes for a this type of dish using Stouffers apples and cranberries.

I  did google it but what I found was cold relish or dressing or a tart.  I just found one that said, "Use the Rustic Apple Cranberry Tart recipe and leave off the topping."

 

I just did not know how much cranberry to 1 pkg of apples and did she add a thickener?  I just remember it was very good!

 

Was hoping that someone here had made itl

Thanks, Novamc.  This is the dish I was trying to create.  Apparently it was so popular years ago that Stouffers started to package their own.  I did find 2 recipes.  One called for 1/2 can cranberries to 1 pkg apples and one called for a full can of the whole cranberries.

 

Guess I'll just go trial & error and add cranberries, bake like you would do the apples, and hope for the best.   Not sure I remember what the ratio was but I do remember that they were super good delicious!

Moms Cranberry Casserole

 

1 c sugar

3 c apples, diced
1 pkg fresh cranberries
1 c quick cook oats
1/2 c brown sugar
1 c chopped pecans
 
Mix together the apples, cranberries and sugar in a buttered casserole dish.
Mix the oats, brown sugar & pecans and pour over fruit mixture.
Dot the top with butter and sprinkle a bit of brown sugar over it.
Bake at 325° for 1 hour.
 
Apple-Cranberry Casserole
 
3 c apples, peeled and chopped
2 c raw cranberries
1 1/4 c sugar
1 1/2 c quick oatmeal (uncooked)
1/2 c brown sugar
1/3 c flour
1/2 c pecans, chopped
1/2 c margarine or butter, melted
 
In a 2-quart casserole that has been sprayed with cooking spray, combine apples, cranberries and sugar.
Mix oats, brown sugar, flour, pecans and melted butter in bowl and place on top of apple/cranberry mix.
Bake in 350 degree oven for about one hour or until bubbly and brown. Serve hot. Good with chicken, turkey, or ham.
 
Notes from the Test Kitchen:
I can sum up the combination of these ingredients in one word: tasty! The crunchiness of the oats and nuts adds great texture to the already flavorful dish.  And if cranberries are out of season, no problem! Frozen berries will work well too.

While sitting around with a group of girls one day, with the holidays approaching, everyone had a favorite dish they were going to make. I always go to so much trouble with my cooking, that I thought I would try this easy dish. Guess what? It was really good, and so easy...

 

SIDE DISH APPLES  

 

2 boxes Stouffer's apples

1 can cranberries, whole, mash with fork

1/2 c. walnuts

2 tsp. lemon juice

 

 

Mix above ingredients. Sprinkle 1/2 cup crushed Corn Flakes and 4 teaspoons melted butter on top. Bake at 350 degrees for 15 minutes.

Honeybit, that sounds like it.  I found this recipe using 1/2 can to 1 box or apples and one using 1 full can to a box of apples.  The one I had did not have a topping.
