I'll have to try this! I also make something similar. I use angel hair pasta and fresh mozzarella, and I don't marinate long. So we will be enjoying this version later this week!  Smiley Happy

@Tinkrbl44 - I always have some Italian meatballs in the freezer for pasta meals that don't have protein in with the pasta. I will also serve this with grilled chicken, pork chops or steaks

I am surprised it says to marinate tomatoes etc. in the fridge. Tomatoes should never be refrigerated. Has anyone tried this, leaving it at room temperature to marinate?

You must have a garden with a good supply of tomatoes year 'round then. 

 

At $2.99 a pound for tomatoes on the vine, they go in the fridge the minute they get home until they are prepared for dinner.  If they aren't being used immediately, I don't want to leave them on the counter to over-ripen.  

 

BTW,  I would expect that anything being marinaded should be in the fridge during that process.

I think it sounds good just like it is, but any protein can be added.  We almost always have pasta with just tomatoes, garlic and parm cheese.

We have bowls of backyard tomatoes - such JOY 😁 This has been a very good harvest!!!

 

I will be making a triple batch of this pasta recipe this weekend. With tossed salad + garlic bread. Need to decide on appetizers and dessert

This recipe is so easy and perfect for hot summer days - minimal cooking required and the 'sauce' ingredients are fresh. 

I used garden tomatoes + basil from our backyard and garlic from Christopher Ranch in Gilroy CA - the USA capital of garlic 🧄 

 

For the pasta, I used bow ties, but penne would also work. And for the cheese, I used Ricotta - blended several big scoops of it into the big bowl of pasta/tomato/garlic goodness - it created a delicious creamy sauce. And had extra ricotta on the side for anyone that wanted extra cheese in their bowl. A side of garlic bread and tossed salad completed the meal 😋

@qvc chick  I would DEFINITELY not marinate the toms in the frig.  Leave them out...  Why would you want to add cold toms to the hot pasta?  I would chop into smaller pieces rather than just quarter the tomatoes..  Also a little red pepper flakes would be nice.  

 

For one other ingredient,  a little sauteed Italian sausage would be tasty!
