I like this pasta salad with chicken:

 

8 oz cooked and cooled bowtie pasta

6 oz baby spinach

3/4 cup craisins

2 11-oz cans drained mandarin oranges

1 can drained and slivered water chestnuts

1/3 cup chopped parsley

2 sliced green onions

2/3 cup honey-roasted peanuts

2 cups diced rotisserie chicken

3 tbsp teriyaki sauce (I like Annie Chun's brand)

2 tbsp toasted sesame seeds

 

Dressing:

1/3 cup vegetable oil

1/3 cup teriyaki sauce

1/3 cup cider vinegar

2 tbsp sugar

1/4 tsp kosher salt

 

Toss chicken with teriyaki sauce.  Combine pasta, spinach, craisins, oranges, water chestnuts, parsley, green onions, peanuts, and chicken.  

For dressing, whisk together oil, teriyaki sauce, vinegar, sugar, salt, and a pinch of pepper.  Toss salad with dressing, then sprinkle with sesame seeds.  Yum!

I love spinach and sometimes eat it several times/week. 

 

I simply saute the spinach in olive oil and fresh garlic and eat it as a side dish. I will also add it to scambled eggs. When I do, I saute the spinach separately and drain the liquid before adding to eggs. I also make salads with baby spinach instead of lettuce. 

 

You can also add it to dips.

Squeeze spinach into everything!

It literally melts down to nothing & taste is mi I almost.

Oatmeal? Throw some spinach in while cooking.

Pasta? Throw it in last minute.

 

How about raw? Think of it as a snack eating leaf by leaf.

I get a pre-washed bag, pop it open & go to town.

At the very least, just throw a bunch in a blender w/ water

and sip on your ‘spinach water’ throughout the day.

 

Don’t do supplements....the fiber/vitamins/minerals in the 

whole food will reward you 10-fold.

 

Think of eating your whole spinach as your medicine...literally.

It’s just how you approach it.

@sidsmom You are really good to be able to drink 'spinach water'!!  I like spinach but don't think I could get it down like that.Smiley Frustrated

@FuzzyFace, This is one of my favorite spinach salads. I am no longer able to eat it due to kidney stones. I hope you enjoy it. I think I found the recipe in Better Homes and Gardens but I am not totally sure about that. I double the dressing when making it. In my opinion the recipe for the dressing is not quite enough.

 

Apple- Brie Spinach Salad

4 large apples cut into 1/2 in. wedges
4 tablespoons maple syrup, divided
8 cups fresh baby spinach
1 round (8 oz.) Brie or Camembert cheese, cubed
1/2 cup pecan halves, toasted

Dressing

1/4 cup apple cider
1/4 cup vegetable oil
3 tablespoons cider vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced

Place apples on an ungreased baking sheet; brush with 2 tablespoons syrup. Broil 3-4 in. from the heat for 3 minutes.
Turn; brush with remaining syrup. Broil 3-5 minutes longer
or until crisp- tender.

In a large salad bowl, combine spinach, cheese, pecans and apples. In a small saucepan, combine the dressing ingredients; bring to a boil. Pour over salad and toss to coat. Serve immediately.
