Got this from Martha Stewarts Everyday food magazine about 2-3 months ago. I really enjoy it and thought id share it with everyone else.

Spinach Dip

Ingredients:

4 slices of bacon (crumbled)

1 medium yellow onion (diced)

salt (to taste) - i use sea salt and twist it about 3 - 4 times

pepper (to taste) - i use cracked pepper and twist it 3 times

1 tsp flour

2 (10oz) pkgs frozen spinach (thaw and squeeze out all liquid, needs to be as dry as possible)

1 cup whole milk

1/2 cup sour cream

1 (8oz) bar cream cheese

1/2 cup grated parmesan cheese

Pita chips or baguette chips

Directions:

Preheat oven to 350, in sauce pan cook bacon until crisp, drain grease except for 1 tbsp, add onion, salt & pepper until tender then mix in flour & cook for 30 seconds, add spinach, milk, sour cream & cream cheese, cook until cream cheese melts then stir in bacon & 1/4 cup parmesan cheese. Transfer mixture into a 1 1/2 quart baking dish, top with 1/4 cup parmesan cheese, bake for 14 minutes.

optional - after cooking in oven for 14 minutes heat in broiler for 3 minutes until top is brown)

Pita chips: Buy a bag of pita bread, cut in half then cut into triangles (should look like a tortilla chip), pull apart layers of each chip and place on a olive oil greased baking sheet and place in preheated 350 oven for 5 minutes (will burn quickly so pay attention)

baguette chips: Buy a loaf of baguette bread and cut into slices, brush each slice with olive oil and bake in 350 degree oven for 8 - 10 min until lightly toasted

I prefer the pita chips, i have tried both. The baguettes can get hard and tough to chew. The pita chips is my recipe the baguette is Martha Stewarts recipe
