Spicy Crab Cucumber Bites
(recipe adapted from: Against All Grain)
These are so light and delicious. They are the perfect appetizer or meal. For me, it's a wonderful sushi substitute when you've given up rice. I've made this three times already. Twice with crab meat and once with salmon.
1/4 cup Greek yogurt (or a combination of Greek yogurt and mayo)
1/4 teaspoon smoked paprika
1/2 teaspoon Tabasco
1/2 to 1 teaspoon Sriracha (depending on your 'spicy' factor)
1/2 pound crab meat, picked over (you may substitute cooked salmon if you prefer)
2 tablespoon minced shallots
1 teaspoon grated lemon zest
1 teaspoon freshly squeezed lemon juice
Kosher salt, to taste
Freshly ground pepper, to taste
1 English cucumber, I peeled in sections and cut crosswise into 1/2-inch thick slices
cherry tomatoes, quartered
Combine the Greek yogurt (or yogurt/mayo combo), smoked paprika, Sriracha and Tabasco in a small bowl and mix thoroughly. Taste for seasoning and add more Sriracha/Tabasco if you like things spicier. In a separate bowl put the crab, diced shallots, lemon zest, juice, salt, and pepper and then gently mix in the spicy yogurt. Again, taste and adjust the seasoning as you go. Grab the cucumbers and use a melon-baller or teaspoon to scoop out the center of each cucumber slice. Be careful not to dig too deeply or your cups will become open-ended tubes and the filling will fall right through. Divide the crab mixture into each cucumber cup and top each one with a quartered piece of the cherry tomatoes. Garnish with a chive if desired.

Those look delicious Lola. So pretty, yet so easy to make. Those would be perfect for a luncheon, and great as a party hors d'oeuvre. Thank you for sharing the recipe. I do have a question, how many portions does this recipe make. I'm guessing since it is just one cucumber that you could probably get 8 or 10 pieces from this recipe?

Hi Jules! You are so very welcome. Yes, definitely 6 to 10 pieces. You can always double or triple it for
hors d'oeuvres or a luncheon.

Thank you Lola for your response. I am going to make them tonight for a light supper and I love things spicy so I'm looking forward to it. If I can find fresh crab I will use that (the canned stuff just isn't the same) otherwise use salmon. I'll let you know how they turn out. I bet these would be really good with sushi grade Ahi tuna as well for people that like sushi, but like you said, don't want the rice. Thanks again for the recipe. Have a beautiful day!
